So today I had the pleasure of taking the kiddos to our neighborhood farmers market. I really love the comradery that the farmer’s market brings. Local farmers markets are so much more than food and vendors selling goods. It’s a chance for us to get to know our community and the diversity that it incumbents. It’s also a chance for us to support local businesses.

Well for this recipe I was able to incorporate the sweet taste of locally harvested Raw Honey. This Chewy Peanut Butter Cookie only calls for 2 teaspoons of honey, but oh does it make a significant addition to tastes. My husband has always been a fan of peanut butter cookies. When he had his first experience with this particular cookie he for sure kept coming back for more “That cookie is good!” “Man, why is it so good?” “Ok, this is my last one.”  I was just tickled, he couldn’t get enough! There’s just something about these Chewy Peanut Butter Cookies that keep you coming back for MORE.

Chewy Peanut Butter Cookies

The most Peanut Buttery, Soft and Chewy Peanut Butter Cookies you'll ever eat!

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 cup packed dark brown sugar
  • 1 egg
  • 2 Teaspoons raw honey
  • 1 teaspoon vanilla
  • 1 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Directions

  • 1)

    In a large mixing bowl cream together butter and sugar with an electric hand mixer until smooth. Add sugar, brown sugar, salt, baking powder, and baking soda. Beat until well combined. Next mix in the egg, vanilla, and honey. Mix in flour until all the flour is absorbed.

  • 2)

    Preheat oven to 350 degrees.  Using a cookie scoop, place balls 3 inches apart on a non-greased cookie sheet. Using a fork press down on the top of the cookie dough once horizontally and once vertically. Bake cookies in preheated oven for 10-12 mins. When cookies are finished baking let cool for 10 mins.
