I am so excited to share this recipe with you today. Southern Red Velvet Cup Cakes with Oreo Cream Cheese Frosting! It can’t get any better. These cupcakes are so rich in flavor, perfectly moist and topped with a fluffy Oreo cream cheese frosting.

 

Red Velvet Cake has long been a southern staple along with Carrot Cake and Pound Cake.  When I was growing up I remember eating Red Velvet Cake at our annual family Christmas party. Each year my aunt would organize the best Christmas parties for our family. We would all participate in the family gift exchange, play games, and indulged in some really delicious food. For us kids, it was the most anticipated party of the year!  Those memories are priceless. I’m so grateful for family and togetherness.  For my family, Red Velvet was such a popular dessert. If you could make a good Red Velvet Cake you were praised for years on end. I’m just laughing about how serious we were about that Red Velvet…….We didn’t play! One year the men in my family even had a Red Velvet bake-off!  I can’t remember who won? But they still talk about that bake-off to this day.  That’s what I love about baking, the timeless memories that a recipe can create.

 

Well, today I’ve taken all those memories from my favorite Red Velvet Cake recipe and created The best Red Velvet Cupcakes With Oreo Cream cheese frosting ever! And people, they taste sooooo yummy! What’s even more amazing is this recipe is so easy and straightforward. Mix your dry ingredients in one bowl. Mix your wet in another bowl. Combine the two and you’re ready to bake them. It’s that simple!

Red Velvet Cupcakes With Oreo Cream Cheese Frosting

Ingredients

  • 2 1/2 Cups All Purpose Flour , Sifted
  • 1 1/2 Cups Sugar
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 2 Teaspoons Cocoa Powder
  • 1 1/2 Cups Vegetable Oil
  • 1 Cup Butter Milk , Room temperature
  • 2 Large Eggs , Room temperature
  • 2 Tablespoons Red Food color
  • 1 Teaspoon White Distilled Vinegar
  • 1 Teaspoon Vanilla

Oreo Cream Cheese Frosting

  • 2 8oz packages cream cheese
  • 1/2 cup room temperature butter
  • 3 cups powder sugar
  • 1 teaspoon vanilla
  • 8 coarsely ground Oreo Cookies

Method

  • 1)

    Preheat the oven to 350 degrees. Lightly oil and flour three 9 by 1 1/2-inch round cake pans.

  • 2)

    In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another large bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.

  • 3)

    With a hand mixer,  mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed.

     

  • 4)

    Line a muffin tin with paper liners. Fill each cupcake liner with 1/3 cup batter.

    Bake cupcakes at 350 degrees in a preheated oven for about 18-19 mins minutes or until a toothpick inserted in the center comes out clean. Do not over bake. Repeat with remaining cupcakes. Cool completely and top with Cream Cheese Frosting.

Oreo Cream Cheese Frosting

  • 1)

    In a medium-size bowl  with an electric hand mixer cream together cream cheese and butter. Next beat in powder sugar and vanilla. Once all ingrediants are combined fold in Oreo Cookie pieces just enough to incorparate.
