I don’t know what’s better?  The fact that this recipe is so easy to prepare or all that bubbly cheesy goodness?!

 

Whatever the case you’ll never slave over making enchiladas again. There’s no rolling or filling tortillas one by one. Just layer everything together in one casserole dish for a simple yet savory enchilada casserole the whole family will enjoy!

Today I’m sharing a recipe from one of my most favorite aunties kitchen. Easy Enchilada Casserole. No rolling or filling tortillas one by one, not that I don’t enjoy my enchiladas traditionally rolled and filled……. but that method takes more time than I’d like to spend on days when I need to get er’ done and have dinner served up quick. So this dish is perfect just layer tortillas, meat, cheese, and sauce top with green onions and olives for simple enchilada perfection!

Easy Enchilada Casserole

No rolling or filling tortillas one by one. Just layer everything together in one casserole dish for a simple yet savory enchilada casserole your whole family will enjoy!

Ingredients

  • 2 lbs ground beef
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • 1 small diced onion
  • 1 30 ct package yellow corn tortillas
  • 1 28 oz can Las Palmas Mild Enchilada Sauce
  • 2 cups colby jack cheese
  • 2 4 oz cans sliced black olives
  • 3 chopped green onions

Method

Cook your meat

  • 1)

    Over medium-heat brown 2lbs of ground beef. Season meat with salt, pepper, and cumin. Add in diced onion and cook until translucent.

     

  • 2)

    In a 9×13 casserole dish pour 1 cup of the Las Palmas Enchilada Sauce on the bottom of the pan.

    layer tortillas, meat, cheese, then sauce in that order.

    Next layer tortillas, sauce, meat, and cheese. Repeat layering. You want to add just enough sauce to cover the tortillas. do not over saturate this will cause your tortillas to turn mushy. Add cheese olives and chopped green onions to the last layer.

    Note: For my top final layer, I don’t add meat. I just add tortillas, sauce, cheese, olives, and green onions (in that order).

    Bake in the oven at 400 degrees for 20mins.
