Hello Friends! Today I have the perfect recipe for you. It’s one of those recipes that’s perfect for a busy day. The kind of recipe that will please a crowd and even the pickiest of eaters.
Well, today was certainly one of those days for me. Today was back to school day for my kids! (She dances does a spin……… un-hah alright…… ) Yes honey, now that the kids are back in school I’m so looking forward to my house being clean and having a well-stocked fridge. I have three boys and man those guys can eat! Their appetites just keep getting bigger and bigger. I am NOT looking forward to our grocery bill a few years from now when they are teens.
My inspiration for this Baked Spaghetti Supreme actually came from my mother who years ago made this dish to take to a family potluck. Everyone raved about how yummy it was and asked her for the recipe. I knew I’d have to reach down deep for this one because that was some years ago fifteen to be exact, man I’m getting old………… She called it baked spaghetti. It’s really quick and easy to make and the best part is it tastes delicious! One thing I can recall very clearly is that the casserole had a ton of chunky veggies and the base called for Cream of Mushroom Soup. Oh, and did I mention it tasted AMAZING!?
My Baked Spaghetti Supreme starts with 2 LBS of ground turkey (my family only eats ground turkey but you can defiantly choose to use ground beef if you prefer, it’s totally up to you.), one chopped onion and 2 chopped bell peppers. One thing that I like about this dish is that it’s so HARTY. I like to chop my veggies kind of thick for a good bite. Chopping the onion and bell pepper is honestly the most work you’ll have to do aside from opening up cans when preparing this dish.
I use this KitchenAid Hand Chopper to chop my veggies it makes prep for me super easy and extremely fast just load and chop. Done! That’s my kind of food prep.
Once you’ve cooked the meat and veggies, add the canned diced tomatoes, olives, and mushrooms. Let that cook for a good ten minutes making sure not to overcook your veggies because they will continue to cook once you bake it in the oven. Next, you add your cream of mushroom soup. You want to stir it in very well until all ingredients are incorporated. Next, add in 1/2 cup of sour cream and boom….. you’re done!
Now its time to put it all together layer noodles, sauce, noodle sauce then cheese. pop it in the oven at 350 for 25mins and Wah-La! Baked Spaghetti Supreme!
